Sugar Paste


Besides buttercream, ganache or frosting, most bakers prefer to use sugar paste or gum paste fondant in cake decorating, I know I do... it's much easier to decorate a cake or cupcake coz it's less messy and you'll get lots of idea with it. It's just like playing with Playdoh... it's FunTime!! (^_^)

Among many recipes, I like the one I got from a book of mine (Kraf Gula by Yasmin Sanusi, RM30.00) coz my attempt was a big succeed, even the first time I made it.

Here's the recipe (translated) :

17 g gelatine
1/4 cup water (room temperature)
1/2 cup melted glucose
30 g shortening
22 g glycerine
1 k icing (sifted)

- Pour in the gelatine into the water (let stand).
- Then double boil it, stir till dissolved.
- Add in glucose and stir.
- Add in shortening and stir.
- Off the heat, add in glycerine. Let stand for 5 min.
- Put the icing in a mixing bowl, make a hole in the middle. Pour in the mixture and mix well till it becomes a dough. It should make 1 k of sugar paste.

* If the dough is too soft, add in some icing (so make sure you have extra, just in case). If it's too hard, add in some water.

Color as you like. Avoid from using the usual food color coz it will soften the dough. Better to use color paste, and use a toothpick instead of pouring in the color on the dough.
